On the island of Leros, a place with a long-standing maritime and fishing tradition, a fisherman with his boat continues to honor his craft and his homeland’s heritage every single day. With respect for nature and dedication to his work, he ventures out into the Aegean waters to fish with genuine passion, just like the old days.
From this deep love for the sea and the desire to bring value to the local catch, “To Koumparaki” was born – a small workshop dedicated to the production of traditional salted fish.
The Workshop
“To Koumparaki” was created with the vision of combining premium-quality raw materials with the authenticity of traditional techniques. The workshop specializes in producing salted fish using only the freshest catches brought in daily by its fishing boat. Processing takes place in a controlled environment, using handmade methods that honor the fruits of the sea.
Each step – from cleaning to packaging – is carried out with personal care and strict quality standards.
